Brown Rice Shazam!

Given the unusual heat we are having in Maine, I am looking to cut the heat in the kitchen.  I actually recipe tested last night from 10PM until midnight because during the day it is too dang hot!

Maverick and Lollie just love Uncle Ben’s Ready Rice.  Typically, I eschew such convenience items because it really is a snap to make jasmine rice (Mayone favorite) and with a little planning time-wise, brown rice is easy too.  With all of that said, I have to admit that this week I am embracing this microwave rice.

In 90 seconds, Maverick can have a bowl of brown rice or Lollie can make a rice, egg and bacon burrito; all prepared without turning on the stove.  I turned Harrison’s leftover brown rice into a quick lunch salad with some canned garbanzos, scallions, tomatoes, cukes, feta and some Newman’s Own Vinaigrette: Delish and perfect for a hot summer day!
