Slow Cooker Sweet and Spicy Almonds

Did you know that your slow cooker can be a cook’s best friend when it comes to homemade gifts?  This simple recipe takes advantage of the slow cooker’s steady heat to deliver a great holiday gift or party treat.

Slow Cooker Sweet and Spicy Almonds

Toasting nuts in a slow cooker delivers a perfectly roasted, highly seasoned snack. These addictive almonds can be stored in an airtight container at room temperature for up to two weeks.

1 lb. raw, unsalted almonds
4 Tbsp. butter, melted
¼ cup sugar
¼ tsp. cayenne pepper, more to taste
2 Tbsp. Taste of Inspirations Cabo Chipotle Spice Rub (or other BBQ spice rub)

1. Set slow cooker on High. Place almonds in slow cooker insert. Drizzle melted butter over almonds and stir well to coat.

2. In a small bowl, mix together cayenne pepper, sugar and spice rub until evenly blended. Sprinkle half the sugar mixture over the nuts and stir well. Repeat with remaining sugar mixture. Cover and cook on High for 1 hour, 15 minutes.

3. Remove lid and stir well. Replace lid and continue to cook, covered, for another 40 to 60 minutes, stirring every 20 minutes. Nuts are done when they appear roasted and brown on the outside. They’ll be slightly sticky when hot, but the coating will harden as they cool.

4. Once cooled, place nuts in an airtight container for up to two weeks at room temperature.

    Where can I purchase the cabo chipotle rub?

    I purchase the cabo chipoltle rub at Hannaford supermarkets. It is Taste of Inspirations brand packagaed in a tin. It is also really good on pork and chicken. If you do not live near a Hannaford, you could use 1 1/2 Tbsp. McCormick Grill Mates BBQ Seasoning and 1 1/2 tsp. McCormick ground Chipotle powder.
