Lunchbox Chronicles: Rice Crispy Treats

Every September, the struggle begins.  I am not talking about spelling lists, multiplication tables or strict bedtimes.  I am talking about school lunch.  More specifically, what is going to fill the lunch boxes that belong to my children?  I find packing lunches to be a big challenge.  I want the contents to be nourishing, to be enjoyed and to be eaten.  Maybe, I am asking too much? I have done what all of the experts suggest.  My children have traveled to the grocery store to select items they would like to consume.  It it still an uphill battle.

My daughter, Lollie*, has requested that a homemade treat made be once a week to pack into lunches.  Our selection this week is Rice Crispy Treats made with marshmallow Fluff.  These no-bake wonders are a favorite in our home.  I found this recipe as a newlywed and have been making it ever since.

Marshmallow Fluff Treats, adapted for Casa Mayone

1/4 cup butter
1 Jar (7 1/2oz) Marshmallow Fluff
pinch kosher salt
1 tsp. vanilla extract
5 cups crispy rice cereal

Melt butter in large soup pot over low heat. Add Marshmallow Fluff, salt and vanilla and cook over low heat about 5 minutes, stirring constantly (set timer). Remove from heat. Add crispy rice cereal. Stir until well coated. Using the bottom of a measuring cup, , press mixture evenly into buttered 13 x 9 x 2-inch pan. Cut into squares when cool. Yield: 24 squares, 2 x 2 inches.  Store, covered at room temperature.

What will be the homemade treat next week?  Hmmmmm, maybe brownies?

    Love the website, Kim! Especially enjoyed these articles about picky eaters. My own three picky eaters have been moaning about what to bring to school for lunch, so this was very timely to see the rice crispy treats…those will be in their lunch boxes next week!
