Honey Butter is a great spread for muffins, pancakes and toast. It is really fabuous on cornbread. Honey Butter holds well in the fridge and is a nice alternative to butter and jam.
Honey Butter
Yields 2 cups.
Soften 2 sticks of salted butter. If you prefer sweet cream butter then add 1/2 tsp. of salt. Place butter and 1 cup of your favorite honey into a mixing bowl. Wildflower and orange blossom honeys are mild and work really well. For a more distinctive honey butter, try lavender honey or thyme honey. Beat on low speed until really smooth, about 3- 5 minutes. If you like citrus flavors, add a 1/2 tsp. fresh orange or lemon zest to your honey butter. Place in a bowl and chill.
