Poached Pear & Hazelnut Clafouti

This is one of my favorite winter desserts using poached pears. Clafouti is a cake-like pudding from France that is great with many fruits and it is easy to make.  This clafouti with poached pears is elegant and really wonderful served with vanilla ice cream or some simple whipped cream. Enjoy!

Poached Pear & Hazelnut Clafouti

1 stick of butter, melted and slightly cooled, divided
2 White Wine Poached Pears

     (high quality canned pears could be substituted in a pinch)
3/4 cup flour
3/4 Cup hulled Hazelnuts
3/4 Cup Milk
3 large eggs, lightly beaten
1/2 cup sugar plus 1 Tbsp., divided
1 tsp. vanilla extract

Preheat the oven to 400° F. Butter a ceramic pie plate or baking dish. Remove pears from poaching liquid and  place into baking dish in a decorative pattern.

Place the flour and hazelnuts in the bowl of a food processor and blend to a fine meal-like texture. With the machine running add the milk, eggs and all but 6 Tbsp. of the melted butter and 1 Tbsp. of the sugar. Add the vanilla. Pour over the pears. Drizzle the remaining butter and sugar over the top. Bake in the oven for 40 minutes.

Clafouti will puff then fall as it cools. Serve clafouti warm or at room temperature.  Any leftover clafouti is really delicious for breakfast.
