When I was little, my dad, grandfather and uncle had an annual competition to produce the first garden tomato of the summer. It was a very cut-throat contest that involved seedlings, secrecy and a year’s worth of boasting for the winner. To this day, my dad eats garden tomatoes with a thin layer of Hellman’s Mayonnaise and a sprinkling of salt.
Sliced Tomato Salad with Orange Mayonnaise
My dad’s bumper tomato crops inspired this perfect party platter.
Orange Mayonnaise
½ cup mayonnaise
1 tablespoon orange zest
1 tablesppon fresh orange juice
1/4 teaspoon kosher salt, more to taste
1/4 teaspoon ground black pepper
1/8 teaspoon Tabasco Sauce
Salad
8 medium garden tomatoes
orange mayonnaise
½ medium red onion, thinly sliced
¼ cup chopped fresh Italian parsley or basil
kosher salt and freshly ground black pepper, to taste
Make the mayonnaise by mixing all listed ingredients together in a bowl. Refrigerate until needed.
Use a serrated knife to cut each tomato into four thick slices. Spread a thin layer of orange mayonnaise onto each slice. Arrange the slices in a decorative, circular pattern on a platter.
Sprinkle the onion and parsley over the tomatoes, then season with salt and pepper.
Serves 8
