Instant Chocolate Mousse from Nigella Express

I had heard a review of this book when it came out (November 2007) and had to buy it not only because I think the world of Nigella Lawson, but also because she featured a recipe for "instant" chocolate mousse made with mini marshmallows!

I had to try it and it was incredibly easy, if not a bit rich. There are other wonderful recipes in this book and as with most of her books, I always get a few great, new ideas. How to Eat is one of my favorites; it features a fantastic recipe for ham cooked in Coca Cola that I have served at several parties. Her website has some beautiful kitchen gifts and gadgets too.

 

Eggless Chocolate Mousse – adapted from Nigella Express

1 1/2 cups mini marshmallows
4 Tbsp. softened butter
9 ounces chocolate, semi sweet is a good choice – chopped into small pieces
1/4 cup just boiled water
1 cup heavy cream
1 tsp. vanilla extract

In the top of a double boiler, place the marshmallows, butter, chocolate and boiled water.  Stir and allow to melt. Remove from heat and from the double boiler.  Allow to cool.

Meanwhile, whip the cream and vanilla until thick. Fold chocolate mixture into the whipped cream, making sure to incoporate completly. Place into your serving bowls, about 1/2 cup to 3/4 each. Place in refrigerator for at least an hour.

I served this with a squirt of Natural by Nature whipped cream. FYI – Their new brown sugar sweetened whipped cream is available now (perfect for apple desserts)!
